A week ago, I had lunch at the Java Room and tried one of their new recipes, curried apple chicken salad. I loved it and decided I had to immediately attempt my own version of it, so I used my usual chicken salad recipe as a base, and added curry, raisins, and apples. This recipe is pretty mild on the spice factor, so feel free to add more curry!
- 1 rotisserie style chicken, shredded
- 1/3 cup nonfat plain greek yogurt
- 1 teaspoon apple cider vinegar
- 1 teaspoon honey
- 2 teaspoons curry powder
- salt and pepper to taste
- 1 apple, diced
- 1/4 cup raisins
In a small bowl, mix the yogurt, apple cider vinegar, honey, curry powder, and salt and pepper. Add the mixture to the chicken and combine. Next, add in the apple and raisins and mix thoroughly. Serve on a wrap or bed of lettuce.
