Homemade protein bars (or energy balls) are popping up all over the internet. There’s all different types…no bake, raw, vegan, gluten free, etc. You don’t need a recipe to make these, just the right ratios of certain ingredients and an imagination!
- Start with a base of old fashioned rolled oats. I find that the mixture will form better if you blend the oats first. You can also add ground flaxseed and protein powder, but these are optional.
- Next, mix in the “glue” of the recipe. This is what will hold it all together. Your options are dates, nut butter, or honey (or a combination of those choices). Pitted dates (blended in a food processor) work very well and taste sweet without adding sugar. Nut butter makes them taste like cookies, and the honey is very sweet but a little too loose on it’s own.
- Now add your extras: coconut, finely chopped nuts, chocolate chips, raisins, extract (I love adding almond extract!), cocoa powder, and anything else you want in there.
- Mix everything and add more “glue” until the mixture holds together. Form into balls or press into a baking pan and store in the refrigerator.
Remember, less is more. Always start with a small amount of what you’re adding, taste the mixture, and add more as needed.
