Turkey Meatloaf

I’m not a big fan of red meat, and DK doesn’t like fish, so we eat a lot of chicken. It gets old after a while, so I added this to our menu rotation. It’s easy, delicious, and filling so all you need is some grilled or roasted veggies and you’ve got a meal!

Turkey Meatloaf

makes four loaves

Adapted from Jaime Eason’s Turkey Muffins

  • 1 lb ground turkey
  • 1 egg whites
  • 1/2 cup quick cooking oats
  • 1 pinch ground cumin
  • 1/4 tsp dried thyme
  • 1 tsp dry yellow mustard
  • 1 tsp black pepper
  • 1/2 tsp salt
  • 1 tbsp garlic powder
  • 1/2 small onion (finely chopped)

Mix all ingredients and form into pill-shaped loaves. Plop them onto a greased baking sheet and bake at 400 degrees for 30 minutes.

Notes: Since it’s just the two of us, I cut the recipe in half so it makes two. I always make one smaller on purpose since DK eats more than me. You can also roast your veggies on the same baking sheet as the meatloaf, and if you use a sheet of aluminum foil it makes for a very quick clean up!
