salmon kale salad & homemade dressing

I discovered kale a while ago for juicing, and now that I figured out how to make salads with it…I’m obsessed. It’s perfect for packed lunches because unlike other greens, the longer it sits in the dressing, the better it tastes. I make salads almost everyday in the summer for lunch, and I was getting sick of my baby spinach. So, I switched it up and used kale instead.

Salmon Kale Salad

Here’s how to make a kale salad:

Strip kale from stems and massage until it turns dark green. Add grilled salmon (or any type of protein such as grilled chicken or hard boiled eggs). Add toppings {baby tomatoes, sliced almonds, dried cranberries or raisins, chopped green onions, etc} Add dressing, put the top on your container, and shake it up!

Apple Cider Chia Seed Dressing

Shake the following ingredients in a half-pint mason jar:

1/4 C. organic raw unfiltered apple cider vinegar

1/3 C. extra virgin olive oil

1/4 t. sea salt

1/8 t. freshly ground black pepper

1 t. Dijon mustard

1/2 t. honey

1/2 T. chia seeds

I love this dressing because it lasts all week and is homemade, so no preservatives or weird funky ingredients. It’s incredibly healthy and pairs well with any salad. Enjoy!
