I ate this everyday last week for lunch, and I didn’t get sick of it. It’s delicious, healthy, and incredibly easy to prepare.
You will need:
- a rotisserie chicken
- baby spinach
- chicken broth
On sunday night, shred the chicken and prepare about 1 cup of quinoa using the broth instead of water. When you pack your lunch, place a couple handfuls of baby spinach in a container and add some of the cooked quinoa and shredded chicken. You should have enough to make one for each weekday! Easy peasy.
*Get creative! Add extra veggies, feta, craisins, or pine nuts for an extra boost and flavor.
